LOVE LOVE sun dried tomatoes - but especially this version by Trader Joe's. It is my secret (no longer!) ingredient in my famous grilled veggies and shrimp salad. :-)
They are sweet, not dry or hard, and EASY! Ready to go, right out of the jar -- just add to omelets, pastas, salads... or as a pizza topping... add last minute because they tend to burn easily...
Also, be careful to not add too much of the oil from inside the jar. I like to use a paper towel to soak up any remaining oil, then throw that away vs. pouring the oil down the sink -- which I hear can solidify and clog your pipes.
