For baking anything from cookies to meats, Silpat non-stick silicone baking mats are great!! Everything comes off the mats easily. After use, I just hand-wash and dry the mats -- the baking sheet is clean as can be! The mats are completely food-safe, and FDA and Kosher-certified.
I recommend getting several so you can have different ones for meats vs cookies and so you can bake several cookie sheets at once!
Silpat pads are available in many shapes and sizes and from a wide variety of retailers. A two-pack of the half-sheet size, is available on Amazon for under $20. One pack of break-and-bake cookies fits perfectly on a half-sheet and half-sheets easily fit in most ovens. :-)
